Behind The Curve

Here's my recession-buster tip of the week. Whether by yourself, for your significant other, for your offspring or to entertain a group of friends ... make crepes!

Ingredients: 3 eggs, 1 cup of milk, 1 cup of flour, touch of vanilla extract and oil.

What to do: Mix all the above ingredients in a bowl with whisk (or fork for those on a real budget). Pre-heat a decent sized frying pan on med-high temp. Pour well-mixed ingredients into a measuring cup and eyeball a reasonable amount to pour into the pan. Quickly, rotate pan (you get the "feel" for this after a few) to spread an even layer of batter in the pan. Wait a short while for signs of bubbles then flip. Cook both sides (you deal with this decision–clearly don't burn or make too raw). Remove crepe, place on plate. Sprikle with sugar and cinammon. Roll like cigar. Eat. Repeat.

Not my thing, but add jam, jelly or whatever else floats your boat.

Enjoy. BTW, chances are that you'll have a distinct moment during this process of feeling in complete control of something new and a tinge of melancholy over not having done this earlier in your life.

Sprinkle with a liqueur like Drambuie for an more authentic taste, or spread a bit of Nutella on top before rolling like the street vendors in Paris
