Taco Truck to Park Permanently in Morristown

There will be a wall of recycled skateboards and a 20-foot Dracaena tree inside the restaurant.

The Taco Truck is looking to park permanently in Morristown. A flagship restaurant “within walking distance of the Green and the train station,” will open at 50 Morris St., next to 7-Eleven.

Partners Jason Scott and Chris Viola are looking to keep the feel of walking up to a food truck and provide an “environmentally conscious quick-service restaurant with truly delicious food.” 

The cuisine is authentic Mexican taqueria, locally sourced, organic and sustainable, which ties in well with the recent opening of Grassroots Natural Market, which is located in the same shopping area.

They’re looking to open this August with a menu that features beef, chicken and pork raised on a vegetarian diet without hormones and antibiotics. Its signature dish is the Taco Pescado: crispy catfish, red cabbage, pico de gallo, Mexican tartar sauce and chipotle salsa. 

BYOB is allowed, and there will be room for 60 seats inside and 40 seats outside.

Like its other New Jersey store in Hoboken, they will use a "Beyond LEED" design, will compost all food waste, and all to-go packaging is biodegradable and compostable. Also, in keeping with its sustainable best practices, there will be a wall of recycled skateboards, water-conserving bathrooms, rainwater collection for watering plants and a 20-foot Dracaena tree inside the restaurant. 

Co-founders Jason Scott and Shachar Scott used their experiences from their travels in Mexico and California as inspiration for The Taco Truck. They wanted to bring the “culture surrounding authentic taquerias and food trucks to the East Coast,” according to the website.
