Say Cheese: Grilled Cheese Factory Now Open

Business opened Dec. 19 at 28 Morris St.

What were you doing with your life when you were 23 years old?

For David Chiarolanzio, the choice was obvious: open a business.

On Monday, he did just that, when The Grilled Cheese Factory officially opened on Morris Street.

The Madison resident and Fairleigh Dickinson University business graduate said he always knew opening a business was in his future. "But, I wanted to play baseball," he said. "So, I played for four years and retired."

After graduating college, Chiarolanzio sold cars through auto auctions, which got old fast.

He looked around Morristown and found 28 Morris St., across the street from . The decision was obvious: stay open late and welcome the bar crowds with ooey gooey grilled cheese sandwiches. The Grilled Cheese Factory will be open until 3 a.m. Thursday, Friday and Saturday nights.

"I was trying to think of something everyone likes," Chiarolanzio said.

Besides grilled cheese sandwiches, which offer a number of accoutrements like ham, bacon, tomatoes, pulled pork and peppers, The Grilled Cheese Factory has other 2 a.m. options to help absorb the booze, like Turkey Clubs and BLT salads.

Tony Rega, a friend of Chiarolanzio's, said the concept, and the location, could not be better.

"I think it's perfect for a 2 a.m. meal," he said. "It's good for your stomach."
